Armenian Cucumber Salad (Acur Salatası)

Armenian Cucumbers are sweet like a melon!

If you have never had Acur, also known as Armenian Cucumber, you are in for a treat!  They have sweet melon-like tastes so refreshing on a hot day!  These gigantic cucumbers are ready for harvest right around NOW!  I have only been able to find them at Gilcrease Orchard, and they are only open EARLY. (Think 7 am arrival the farthest possible distance you can drive while still being in "Vegas".)

It is worth the drive, the gas, the heat, the dirt, and the manual labor of picking your own vegetables.  This Salad is amazing. Honestly, I planned this to be more of an adult dish. WAS I WRONG!  The dressing turned out to be a Sweet & Sour Dressing. It balanced the sweet melon and the raw onion slivers!  Try it for yourself and let me know!


Acur Salad

1/2 Onion, cut into slivers (We like Sweet or Red!)

1 Giant Armenian Cucumber, sliced (Acur)

1 TBS Honey

1 TBS Red Wine Vinegar (If you are feeling fancy, try Pomegranate!)

1 TBS Olive Oil

Fresh Rosemary and Fresh Thyme to taste

Salt & Pepper to taste


Just mix it all up and chill at least 20 minutes.

You will find it is simple to make this recipe your own. Usually, the Cucumber is cut thin, but I live it in thick slices!  I also go heavy on the Rosemary & Thyme. Experiment with different kinds of vinegar and oils.  Make it your own!
