Tips and Tricks from a Pro!

There are so many great ways to tweak a recipe to make it better - and that’s what we want right? A better-tasting cake, fluffier cookies, flakier biscuits, the list never ends. Baking is such a beautiful art because, while you do need to pay closer attention to your recipe, there is so much freedom to express your creativity and try something new. 

Some of my favorite tips and tricks that I have learned along the way during my own baking journey:

  • Room temperature eggs
  • Room temperature butter
  • Use REAL butter, not margarine
  • Use REAL vanilla extract, and measure it with your heart
  • Sift your flour and other dry ingredients with a Baking Sifter 
  • Don’t forget to cream your butter and sugar for 3-5min before adding in other wet ingredients
  • Use parchment paper to line your cake pans, and Silpat Mats when baking cookies
  • Invest in a good whisk, quality bowls, and a good strong spatula
  • Use a Good Rolling pin, Joseph and Joseph
  • Make sure your baking soda and baking powder are not expired
  • HAVE FUN WITH IT!!!


One thing I want to talk about is sifting your flour and other dry ingredients. This helps to break up the flour, gives you more accurate measurements, and is easier to mix which in turn will give you a better dough and/or batter.


When baking, to ensure your cakes don’t stick, spray your pan with nonstick baking spray, then lightly flour your pan, and then place parchment paper down to line your cake pan. This helps your cake easily release from the pan without sticking to the bottom and sides. There’s nothing worse than baking a cake and not having it release from the pan — so frustrating when that happens! The parchment paper prevents that. The Silpat Mats help to prevent your cookies from sticking and help the bottoms of your cookies not burn.


Investing in proper tools really will help you in your baking journey. There’s something to using good quality equipment vs poor quality equipment. I personally enjoy using the OXO brand, glass baking dishes, and some good-quality wooden spoons for mixing.


Most importantly, have fun with your baking! Try new ingredients, add in some sprinkles to your cake batter or candies in your cookies. Add some fresh berries to your frosting or garnish your cake with fresh herbs. The possibilities are endless!
