Recipe: Slow Cooker Corned Beef and Cabbage

St. Patrick’s Day is just around the corner and with it being on a weekday, there is little time to prep and cook our family’s favorite dinner - Corned Beef and Cabbage. Being a busy mom, I quickly discovered how much I rely on my slow cooker and St. Patrick’s Day is no different. For a few years now, we have prepared our corned beef and cabbage meal the night before and in the morning, turned the slow cooker on. When we are ready to eat, the corned beef is tender and mom didn’t have to slave over the stove all day to make dinner. 

Ingredients

  • Small red potatoes - depending upon the size, you can cut in half or quarters
  • Cabbage - sliced
  • Corned Beef Brisket
  • Water


Directions

  1. Place red potatoes on bottom of slow cooker
  2. Place cabbage over potatoes
  3. Place corned beef brisket on top with seasoning packet (if one comes with it)
  4. Cover with water
  5. Cook on low for 6-8 hours, depending upon size
  6. Remove, slice and serve with cabbage and potatoes
